Loaded Nachos

It’s kind of funny, there are Nachos and then there are Nachos. In my house when we are feeling lazy we have Nachos, a packet of cheese or plain corn chips, some pre-made store bought salsa and pizza cheese sprinkled over the top and popped in the microwave for a minute. Serviceable, but not exciting. Then we have loaded Nachos, still quick and easy, but requires a little more prep.

Ingredients (serves two)

  • Corn or tortilla chips (enough to cover the base of your plate)
  • 250g cherry tomatoes or roma tomatoes (or a mix) diced
  • 1 avocado, peeled and sliced
  • 125g diced bacon, cooked
  • 125g cooked chicken breast, shredded
  • 1 cup of pizza cheese
  • Olive oil, oregano, basil and black pepper for seasoning
  • Lemon wedges for serving
  • Sour Cream for serving

Method

  1. Preheat oven to 180C
  2. Layout corn cheese on overproof dish or plate
  3. dice capsicum & tomatoes, peel and cut up avocado
  4. cook bacon and chicken (these can be pre-cooked)
  5. toss diced tomatoes in a drizzle of olive oil and mix with a sprinkle of herbs and pepper
  6. now layer all ingredients on top of the corn chips, leaving the cheese til last
  7. place in oven for 10 minutes or until all the cheese has melted
  8. squeeze lemon juice over the top and serve immediately with sour cream and perhaps even fresh guacamole

This is so good, summer or winter and is a healthy option for junk food.
