We eat this all the time, it’s quick and easy and really delicious. In Summer we frequently have BBQ Chicken pieces or even cold. In Winter the chicken is always freshly grilled, or if you are feeling lazy a store-bought BBQ cut up in quarters can do just as well. The marinated chicken and dressing can be made the day before.
Ingredients (serves two)
Marinated Chicken
- 1 Chicken breast fillet
- 1 tsp dried oregano & basil
- 1 tsp back pepper (optional)
- 2 tsp fresh lemon juice
- 2 tsp apple cider vinegar
- 2 tsp olive oil
Mix all the ingredients (apart from the chicken), then marinate the chicken (once trimmed) in a bowl for a few hours in the fridge (don’t forget to turn the chicken).
Grill or BBQ the chicken in a little olive oil in a hot skillet
Garlic Dressing
- 1/2 plain Greek yogurt
- 1 tsp crushed garlic
Mix together and set aside in the fridge (you could also add some finely diced cucumber as well)
Salad
- Washed Coz or Butter leaf lettuce
- Cherry tomatoes (cut in quarters)
- 1 Cucumber (peeled and sliced)
- 1/2 cup bacon pieces (cooked)
- Croutons (or grissini sticks broken up)
- Baby Spinach
Lay a bed of baby Coz leaves on a serving tray then shred more lettuce and place over the top. Slice the cooked chicken fillet and place through the centre of the tray. Then spread over with tomatoes and cucumber, sprinkle with bacon and croutons.
Additional – Shredded or flaked Parmesan cheese and sliced boiled egg, can also be added.
